As it just so happens, I've spent a lot of time in Mexico City—where, long before I became a chef and sommelier, I worked as a singer and backup dancer for the iconic Mexican star Luis Miguel—and I came away with my ultimate rendition of the greatest Mexico-style guac recipe ever.
